Introduction
Moist and delicious, these muffins are fat free, except for the nuts. They are packed with protein and fiber and are still only 150 calories each!Not too sweet, they are loaded with hearty chunks of real apple, and topped with a light crust of brown sugar which makes them truly satisfying.

Ingredients

Dry Ingredients
1 Cup Whole Wheat Flour
1 Cup Oats
1/4 t Salt
1 t Cinnamon
1/2 t Ground Ginger
1/4 t Nutmeg
1/4 t Ground Cloves
1/2 Cup Chopped Pecans
Wet Ingredients
1 Cup Cinnamon Applesauce
1/2 Cup Honey Fat Free Greek Yogurt
1/4 Cup Egg Beaters
1/4 Cup Milk
1/4 Cup Real Maple Syrup
1 and 1/2 Medium Apples (or 2 small), chopped
Topping
6 t Brown Sugar
Cinnamon to taste
Directions
Preheat oven to 400 F
Spray a standard-sized muffin pan lightly with nonstick spray.
Mix all dry Ingredients in a large bowl. Make a well in the center, and set aside.
Mix all wet ingredients in a medium bowl. (You can chop the apples last, throwing them into the wet mix as you go to prevent browning)
In a small bowl, mix the brown sugar and extra cinnamon.
Pour the wet ingredients all at once into the bowl with the dry ingredients. Mix quickly until just evenly distributed.
Spoon evenly into muffin tins, should make 12 good-sized muffins.
Sprinkle each muffin with some of the brown sugar mixture, and pop the muffin tin into the oven.
Bake about 15 minutes, or until a toothpick comes out almost clean (They will still be moist inside, but not raw)
Remove from muffin tin, and allow to cool a little before eating. Enjoy!

SINGHIZPRAISE
Good recipe. Needed to bake for 25 min, not 15 to prevent gooey center. Added 1 t baking powder and extra cinnamon since I used plain applesauce. The taste was good though slightly bitter for some reason. Used honey instead of syrup as well. Hearty muffin but recipe needs to be played w/a little. - 10/23/10
