Ingredients

    Beans, red kidney, 4 cups
    Beans, pinto, 4 cups
    Green Peppers (bell peppers), 3 cups, chopped
    Onions, raw, 3 cups, chopped
    *Turkey, Ground turkey, 93% lean, 20 oz
    Salt, 1 tsp
    Pepper, black, 1 tsp
    *Cumin seed ground, 2 tsp
    Chili powder, 2 tbsp
    Tomato Paste, .25 cup
    Tomato Sauce, 2 cups
    *diced tomatoes & green chilies RoTel 10oz canned
    Garlic, 4 cloves
    *Coriander seed ground, 1.5 tsp
    Cilantro, raw, 3 tbsp chopped
    Oregano, ground, 1 tsp
    Marjoram, dried, 1 tsp
    *Swanson Chicken Stock (Low Sodium), 4 cups


Directions

brown the ground turkey meat. add chopped onion and peppers until translucent. add all spices. cook in medium for 10 minutes. add all beans and tomato products. stir well. add cilantro and chicken stock. Bring to simmer and reduce heat to low. cover and cook for 2 hours. makes 16 servings. garnish with fresh chopped cilantro and optional low fat shredded mexican cheese blend.
