Ingredients

    Yellow Sweet Corn, Frozen, 1 cup kernels
    Onions, raw, 1 medium (2-1/2" dia)
    Green Peppers (bell peppers), 1 cup, chopped
    Extra Virgin Olive Oil, 1 tsp
    garlic minced - christopher ranch in water, 3 tbsp
    Chicken breast boneless skinless 8 oz
    Cumin (ground), 2 tbsp
    Canned Low Sodium Diced Tomatoes, 411 grams 1 16 0x can
    black beans (prepared) 2 cups
    Jalapeno Peppers, 1 pepper seeded and diced
    *Ground Red Pepper, 1 tsp

Directions

heat oil in skillet add chicken and lightly brown, add onions garlic and peppers and cook until almost done add black beans drained corn tomatoes and jalapeno add cumin to taste simmer 20 - 30 minutes

Makes 5 1 cup servings! Maybe more red pepper next time!
