Introduction

A healthy alternative to plain old meatloaf. Made with ground chicken breast, guacamole chips, and salsa to add a southwestern flair. Note: may be considered spicy to some. Ingredients

    Ground chicken breast - 16oz
    1 egg
    1 can diced tomatoes w/green chilies
    1 small bag (3 oz) of Quaker Guacamole Tortillaz - smashed
    Sliced black olives - 4 oz
    Reduced fat Mexican Shredded Cheese - 1/4 cup and 1/4 cup
    1/2 jar of salsa (approx 14 Tbsp)
    1/2 lime - squeezed (just the juice)
    1 Tbsp cumin
    1 Tbsp chili powder

    Note: this recipe is pretty high in sodium so you may want to substitute ripe tomatoes for the canned diced tomatoes.

Directions

Combine all ingredients (except for 1/4c of cheese) and dump into a Pam-sprayed loaf pan. Bake (covered with foil) at 350 for about 45 minutes. Remove from oven, remove foil, sprinkle with remaining 1/4c cheese and then broil for about 5-10 minutes until cheese is melted but not burned. Note: my oven is super old so cooking times may vary :)
