My mother-in-law raised 6 kids on this. I made it for my husband tonight and he liked it, but said that his Mom's had more liquid in it. She probably added the potato water, which I didn't do. Ingredients

    1/2 # 93% Lean Ground Beef
    1 cup boiled cubed potatoes, drained
    2 cups tomatoes, fresh, canned or frozen (thawed)
    1/2 cup chopped onion
    2 fresh medium size mushrooms, sliced
    1/4 tsp. Mrs. Dash Lemon Pepper (I used store brand)
    1/4 tsp. garlic powder (not salt)

Directions

Put cubed potatoes on to boil. In a large skilllet with lid, crumble and brown ground beef, add onion and mushrooms when it's just about done. Drain and add potatoes, tomatoes and seasoning. Stir well. Cover, reduce heat to low, and simmer for about 15 minutes. If it starts to stick add a little water. You can use the potato water. This is low carb, low sodium and low fat. Makes 3 servings. I didn't measure, just divided up.
