Ingredients

    250g Spinach, thawed & drained
    1 can (14.5 oz) Diced Tomatoes, no salt added
    3 tsp garlic, minced
    112g (4oz) Whole Wheat Spaghetti (or pasta of your choice)
    4 tsp parmesan cheese
    Non-Stick Cooking Spray

Directions

Spray pan with cooking spray and sautee garlic. Add spinach and tomatoes, bring to a boil.
Toss over spaghetti or pasta of your choice.
Sprinkle parmesan cheese on top.

    Very Good
    I made this with diced tomatoes with onion and garlic, and added some pre-cooked ground turkey Italian sausage. I had some fresh spinach I wanted to use, so I added it when the tomatoes started to boil. Made for a very good, light pasta sauce. I'm saving this one! - 2/27/13
