Introduction

I don’t know if non-Southerners have heard of such a delicacy as the “killer potato”, but basically, it is a baked potato loaded with barbecued pork, bacon, butter, sour cream, and cheese. They are most delicious and probably heart attack-inducing. So, today I managed to come up with one that was just as delicious but not so bad for you.
I use a couple of brand names, including Curly’s premade BBQ because it’s not gross to me like Lloyd’s BBQ and is surprisingly low in fat and calories, as well as Bacon Salt, which is pretty awesome, as a little sprinkle will add a lot of bacon flavor without the actual fat of bacon, and surprisingly not a lot of saltiness for something with “salt” in its name.

Ingredients

    1 large baking potato
    1/4 cup (1 serving) Curly's Pulled Pork BBQ
    1/8 cup lowfat shredded cheese
    1 tbsp fat free sour cream
    1 tbsp chives
    Sprinkle Bacon Salt
    Ground black pepper

Directions

Bake potato in oven at 400 for one hour. Open package of Curly’s BBQ and heat up for about 10 minutes in a pan on medium-low heat. Split potato and stuff with BBQ, cheese, sour cream, chives, bacon salt, and pepper. Trust me, with all the flavors going on here, you won’t miss the butter, but if you must, butter spray would probably work okay here. Serve with salad for a delicious dinner! Makes one serving, but it's easy to cook more BBQ and potatoes for more people.
