It's also an awesome garnish for tacos, burritos and nachos.

Ingredients

    1 can yellow sweet corn, drained
    1 Tbsp unsalted sweat cream butter
    1 tsp fresh ground black pepper
    1 or 2 tsp red pepper flakes (depending on how spicy you want it)
    1/2 tsp ground sea salt

Directions

Place frying pan on medium heat.
Drain excess water from can of corn and place in frying pan.
Add about 1 tbsp butter (you can use a little less if you want, but don't leave out entirely).
Sprinkle with pepper, red pepper flakes and salt. Fry in the pan for about 10 minutes.
Serves four as a side dish, or use as a garnish on tacos, burritos, etc.

    Very Good
    Great side for Mexican dishes. My husband really liked this. It was a little greasy for me so next time I will cut the butter back to 2 teaspoons. - 5/15/13
