Ingredients

    3 large egg whites
    1 strip bacon, chopped
    1/4 c onion, chopped
    1/4 c green peppers, chopped
    2 Tbs seeded, chopped fresh tomato
    1 whole-wheat flour tortilla
    1/4 cup (1/2 oz) finely shredded Cabot 75% Light Cheddar Cheese
    2 tsp red taco sauce

Directions

Mist a small microwavable bowl w/olive oil spray. Put in the egg whites, set aside. Set a small nonstick skillet over med-high heat, until drop of water sizzles on it. Remove from heat, spray w/cooking spray, return to heat, add bacon, onion, and peppers. Cook until bacon is crisp. Add tomato and cook for 1 min. Transfer bacon mixture to a bowl, keep warm. Cook tortilla in pan over med-high heat until warm (30 sec). Cook egg whites in microwave on low power for 30 sec intervals until eggs are merely runny on top, stirring w/a fork break into large pieces. When eggs are done, mix in bacon mixture. Place tortilla on a plate, sprinkle w/cheese. Top w/egg and bacon mixture, drizzle w/taco sauce, fold tortilla to make burrito.
