Ingredients

    FISH - Mahi Mahi, 16 oz
    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Onions, raw, 0.5 cup, chopped
    Garlic, 2 cloves
    Capers, canned, 2 tbsp, drained
    Black Olives, 8 jumbo
    Crushed Red Pepper Flakes, 1 tsp or to taste
    Lemon Juice, from 1 fresh lemon
    Orange zest (optional)
    Salt & Pepper to taste

Directions

Squeeze half the fresh lemon juice over fish
Season fish fillets with salt and pepper
Add olive oil to warm skillet/saute pan (med-low heat)
Add Onions and garlic to skillet
Saute until transparent but not brown
Add tomatoes
When tomatoes begin to yield juice, add fish fillets, capers, olives, remaining lemon juice, orange zest and red pepper flakes
Adjust seasonings to taste
Cook for another 5-10 minutes until fish is cooked through.
