    4 c. All Purpose Baking Mix
    2/3 c. Quick or Old Fashioned Oats
    2/3 c. Granulated Sugar
    1 tsp. Ground Cinnamon
    2 Large Eggs
    1 can 30 oz. Libby's Easy Pumpkin Pie Mix

    Streusel Topping:
    3 tbsp All Purpose Baking Mix
    3 tbsp Granulated Sugar
    3/4 tsp Ground Cinnamon
    2 tbsp Butter

    Instructions for Muffins:
    Preheat oven to 400 degrees. Paper line or grease 24 muffin cups.

    Combine baking mix, oats, sugar and cinnamon in a large bowl. Combine pumpkin pie mix and eggs in a medium boal, mix well. Stir into oat mixture just until moistened. Spoon batter into prepared muffin cups, filling 3/4 full. Sprinkle with streusel topping. Bake 14-16 minutes or until wooden pick inserted in center comes out clean. Remove from pans to cool. Best served warm.

    Streusel Topping Instructions:
    Combine baking mix, sugar and ground cinnamon into small bowl. Cut in 2 tbsp butter with pastry blender or 2 knives until mixture is crumbly.
