Ingredients

    ½ pkg. super-sweet corn, thawed and drained
    1 can black beans, drained and rinsed
    1 jalapeno, seeded and finely minced
    ½ each, red and orange pepper, minced
    Handful parsley, minced
    1 large clove garlic, put through a press
    Juice of 4 limes
    1 Tblsp. Olive oil
    ¼ tsp. cumin, more to taste
    ½ tsp. kosher salt, more to taste

Directions

In a small bowl, combine lime juice, olive oil, cumin and salt. Set aside.

Combine remaining ingredients and mix well. Pour dressing over all and mix again. Serve at room temperature or chilled. Makes approximately four servings.
