Introduction

Ingredients

    2 Eggs
    1 1/4 C Sim Milk
    1 C Unsweetened Applesauce
    1 1/4 C Whole Wheat Flour
    1 C Oatmeal (Quick or Regular)
    4 Tbsp Wheat Germ
    4 tsp Baking Powder
    1 Tbsp Brown Sugar
    1/4 tsp Salt

Directions

Beat eggs, milk, and applesauce together. Add
dry ingredients. Mix to combine.

Using margarine stick, coat hot griddle where batter will go. Pour batter (about 1/4 cup per pancake) onto griddle and cook till edges are dry. Flip and cook other side, coating griddle again with smears of margarine.

I like to serve these with peanutbutter instead of regular butter, and sugar free syrup. My kids love them and will pick them up dry and snack on them throughout the day.

    This recipe was surprisingly not overpowering w/whole grain. It was YUMMO! I didn't have wheat germ so i used oat bran and I didn't have the applesauce, so I used 1/4 cup of canola oil and added more milk (1/4 cup more.) It made 18 - 4"-5" size pancakes at 95 cal. for ea. - 11/4/07

    My husband made this recipe and substituted ground flax seed for the wheat germ. These pancakes were very light and fluffy and very tasty! - 1/27/08

    I really liked these - I used regular wheat flour and it wasn't overpowering like normally. I had to add more milk to get the right constistency and just used a non stick pan - no margarine needed. - 6/13/09
