Ingredients

    5 (6 inch) corn tortillas
    1 cup shredded mexican blend cheese
    1/4 cup canned chopped green chiles
    2 eggs, beaten
    1 cup egg beaters
    1/2 cup Evaporated Milk
    1/2 cup Light Sour Cream
    1/2 teaspoon chili powder
    1/2 cup onion, chopped
    14 cup green pepper, chopped

Directions

In a skillet, cook the onion and green pepper until vegetabals are tender. Add the black beans and cook a minute longer.

Place four tortillas in a greased 9-in. pie plate, overlapping and extending 1/2 in. beyond rim. Place remaining tortilla in the center. Layer with vegetable/bean mixture, cheeses and chilies.

Combine eggs, milk, sour cream and chili powder; slowly pour over chilies.

Bake at 350 degrees F for 45 minutes or until the center is set and puffed. Cut into 6 wedges.
