Introduction

This is a great light summer veggie salad. Not a lot of prep, just dicing. Best when chilled overnight and served the next day. I like the strong flavors of onion and vinegar, but if the listed amounts are too much please feel free to change them to fit your tastes. This is a great light summer veggie salad. Ingredients

    1/2 cup thinly sliced carrots
    1/2 cup thinly sliced radishes
    2 cups thinly sliced zucchini
    1 cup thinly sliced red onion
    1/4 to 1/2 cup white or cider vinegar
    1 tbsp olive oil

Directions

Use a food processor to slice veggies into small thin circular discs. If you do not have a food processor, hand slice veggies as directed.

Place veggies in a medium sized bowl.

Add vinegar and olive oil.

Add sea salt and freshly ground black pepper if desired.

Mix well and chill overnight.

Makes 10 1/2-cup servings.
