Ingredients

    1 large can (28 ounce) whole tomatoes. I prefer Muir Organic whole tomatoes.
    1 Cup water
    4 cups low sodium chicken or vegetable broth
    1 small can low sodium V-8 juice
    1 large onion, chopped finely
    1.5 cups diced celery
    1 cup diced carrots
    1 can (15 ounce) garbanzo beans, well rinsed
    6 cups shredded cabbage
    1 Bay Leaf
    1 teaspoon garlic powder
    1 Tablespoon Frank's brand chili and Lime hot sauce or Tabasco sauce to taste

Directions

Place tomatoes in blender. For best taste, use whole tomatoes. Add water & blend. Put into soup pot. Add rest of ingredients. Bring to a boil, turn heat to low and simmer 20 minutes, or until carrots are tender. Makes 12 one cup servings

    This was a flavorful and filling soup. I did add some pasta. And I grated parmesan cheese over when I served it. - 10/20/10
