Ingredients

    14oz (1 can) Vegetable broth (low sodium optional)
    1 tbsp Extra Virgin Olive Oil
    1 cup Lundberg Black Japonica Rice (can be substituted with long or short grain wild rice)
    12.5oz (1 can) Chicken Breast, drained (can be substituted with cooked. shredded chicken breast)
    1 cup Mushrooms, canned
    12oz (340g) Broccoli Florets, frozen
    Fresh pepper is optional for seasoning

Directions

Combine rice, vegetable broth, and olive oil in a (4qt minimum) saucepan, bring to a boil, stir, reduce heat and simmer until rice is done (approximately 25 minutes).
Add drained chicken breast and mushrooms, stir and simmer for about five to ten minutes. Canned chicken will shred.
Add broccoli, stir and simmer until broccoli is done.
Season with fresh pepper to taste.
Serve right from the pot with a salad on the side.
