Introduction

This is a recipe my mom found in a Newfoundland recipe book. DELICIOUS!!!

I like to add a little lemon juice or zest and raspberries instead of blueberries and orange!!

Number of Servings: 14

Ingredients

    1/2 cup of flour
    2/3 cup of whole wheat flour
    1 tbsp baking powder
    1/2 tsp of salt
    1/4 tsp of cinnamon
    1 cup of unpacked brown sugar
    3/4 cup of oatmeal
    1/4 cup of canola oil of vegetable oil
    1 egg
    1 cup of skim milk
    1 cup of blueberries
    Zest from 1 orange

Directions

Mix dry ingredients.

Beat egg, oil and milk.

Stir in with dry ingredients and then add blueberries and orange peel. Fold gently.

Bake on 400 for 15-20 minutes

    Incredible!
    Thought this was a good, hearty muffin with the oatmeal and mixed flours! Added airtime allspice and cloves to the mixture but that was about it. Recipe made 6 jumbo muffins just perfect for a catering gig! Thanks for the recipe!! - 8/17/13
