Introduction

This banana bread is really low fat but you would never know it! To make it even lighter use splenda and a full cup applesauce and eliminate the butter completely. Ingredients

    1/2 cup butter, melted
    1/2 cup unsweetened apple sauce
    2 cups white sugar
    1 cup egg substitute
    2 teaspoons vanilla extract
    3 cups all-purpose flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 cup sour cream
    1-1/3 cups and 2 tablespoons chopped walnuts
    5 medium bananas mashed

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pan.

2. In a large bowl, stir together the melted butter, apple sauce and sugar. Add the eggs and vanilla, mix well.

3. In a separate bowl combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream and bananas. Spread evenly into the prepared pan.

4. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
