Introduction

Number of Servings: 6

Ingredients

    2 med. green tomatoes-4 slices, chop remaining
    2 tsp minced garlic
    6 eggs
    1/4 cup sour cream
    2 oz goat cheese (more if you like, omit if you don't)
    1/4 cup grated Parmesan
    salt & pepper to taste
    1 tbsp olive oil
    1 tbsp butter

Directions

Preheat broiler. Slice 4 thin slice from tomato, set aside. Chop remaining tomato. Heat olive oil and butter in a broiler-proof skillet over medium heat. Add the garlic and saute lightly. Add the chopped green tomatoes, stirring to coat with garlic and oil. Salt and pepper lightly. Cook tomatoes until very soft. While tomatoes cook, beat eggs and sour cream together. Season w/ salt and pepper. Once tomatoes are soft, pour egg over evenly. Reduce heat to medium low. Add the goat cheese on top of the eggs. Cook the eggs slowly without stirring. When top just begins to set, lay remaining tomato slice on top, sprinkle with Parmesan, and put whole skillet under the broiler to finish. Broil until top is golden brown. Slice into wedges to serve. Serves 4-6.

Substitutions may be made for goat cheese. Try swiss or cheddar.
