Ingredients

    1 1/2 c cornmeal mix
    1/2 c flour
    1/2 c natural applesauce
    1/4 c Dannon light and fit vanilla yogurt
    1/2 can sweet corn, pulsed in food processor
    2 tsps Splena (or sweetened to taste)
    water to cornbread consistency

Directions

Mix all ingredients together. Spray 24 hole mini muffin pan with Pam. Fill muffin holes. Makes 27 muffins. One muffin is one serving.
