Introduction

Ingredients

1 large onion, chopped
2 large carrots, chopped
1 large sweet potato, chopped
1 medium butternut squash, chopped
1 large russet potato, chopped
3 Tbsp Earth Balance
1 cup soy milk or to taste
1 large handful of nutritional yeast
salt

Directions
Start with a large soup pot, sweat the onions in the olive oil. Once translucent, add carrots. Allow to cook about 5 minutes. Then add all other chopped veggies, mix thoroughly. Add 6 cups of veggie stock (we use veg bullion we mix with water...much cheaper!). Allow to boil softly (not a hard boil) until all the veggies have cooked through. This could take 20 minutes or more, depending on the amount you have in the pot. Check on it every 10 mins or so, by poking with a fork.
Once all has cooked through, simply use an immersion blender to cream the soup. Once the blender has done its job, add Earth Balance, soy milk, and nutritional yeast. All these ingredients are done to taste. Add as much or as little as you desire, as well as spices. Would be wonderful with sage or chives...have fun with it!
Serves at least 8 large bowls...watch out, it is very filling!
