Introduction

Ingredients

6 lbs Peeled Tomatoes (to remove the skins easily blanch the tomatoes)
2 + Cups of Basil Chopped (save some for a garnish)
1/4 Cup Olive Oil
1 Yellow Onion Chopped
2 Celery Stalks Chopped
2 Cloves of Garlic Chopped
1 1/2 Cups Cashew Cream (See My Cashew Cream Recipe)
1 L of Vegetable Stock
Pepper to tast
Directions
1. Peel the tomatoes using the blanching method, remove the seeds and chop coarsley
2. Chop the onion, garlic, and celery, add to a large soup pot with the oil and saute
3. Add the tomatoes, basil, cashew cream, vegetable stock, and pepper to taste to the pot
4. Simmer the soup for about 20mins
5. Transfer the soup to a blender a few cups at a time and puree.
6. Return the soup to the pot and simmer for 10 minutes.
7. Garnish with a few basil leaves
