Ingredients

3 Tbsp olive oil
1 cup chopped onions
3 Tbsp finely diced celery
1 cup chopped mushrooms
1 minced clove garlic.
1 can diced tomatoes
1 can tomato paste
1 jar of marinara sauce.
Meatballs or Meat Sauce:
1 lb extra-lean ground beef
1 moistened slice of wheat bread
1/2 cup Egg Beaters
1/4 tsp paprika
1 minced clove of garlic.
1/4 tsp Marjoram
1 Tbsp dried chopped parsley.
Directions
Heat 3 Tbsp olive oil in large, deep pan. Add 1 cup chopped onions, 3 Tbsp finely diced celery, 1 cup chopped mushrooms and 1 minced clove garlic. Once onions are translucent & slightly browned, add 1 can diced tomatoes and 1 can tomato paste, and 1 jar of marinara sauce. Simmer.
In a bowl, mix 1 lb extra-lean ground beef, 1 moistened slice of wheat bread and Egg Beaters. Season with paprika and another minced clove of garlic. Add 1/4 tsp Marjoram and 1 Tbsp dried chopped parsley. Roll into meaballs, and drop meatballs into simmering tomato sauce, and simmer an additional 30 minutes. For meat sauce, mash meatballs before service.
I freeze the leftovers in 16 oz tupperware containers, , and thin with another jar of marinara sauce - which makes an even healthier meal the next time.
