Introduction

Ingredients

    2 HMR Oatmeal packets
    1 packet Vanilla HMR 70 plus pudding
    1 cup pure pumpkin
    3 tsp pumpkin pie spice
    1/2 cup no calorie sweetener- reserve 1 tsp
    1 medium apple -thinly sliced
    Hot water
    cold water

Directions

In 2 separate medium bowls combine 1 HMR oatmeal packet with 1/2 cup Hot water in each bowl. Mix and let stand.
Prepare 8" square pan with nonstick spray.
Spread 1 bowl of oatmeal mixture in a very thin layer.
Bake for 10 minutes in a 350 oven until golden or until firm. Remove when done, let slightly cool.
Meanwhile in medium bowl mix HMR 70 plus vanilla pudding with 2 oz cold water. Mix till smooth. Add 1 cup pure pumpkin, pumpkin pie spice, no calorie sweetener. Mix until smooth. Spread 1/2 pumpkin mixture onto cooked oatmeal crust. Layer thinly sliced apples onto pumpkin mixture. Spread remaining pumpkin mixture over apples. Using 2nd oatmeal mixture bowl spread evenly over pumpkin mixture. Sprinkle 1 tsp no calorie sweetener on top. Spray with cooking spray. Return to oven for 30-40 minutes.

Let cool. Serves 9 Store in refrigerator. Taste best cold.
