Scrumptious blueberry muffins with a hint of lemon Scrumptious blueberry muffins with a hint of lemon
Number of Servings: 12


    1 egg
    1 cup milk
    1/2 cup olive oil
    1/2 cup brown sugar, loosely packed
    2 cups whole wheat flour
    1/2 tsp. salt
    1 tbsp lemon rind
    1 cup blueberries, frozen or fresh
    3 tsp baking powder
    1/2 tsp. cinnamon
    1/4 cup granulated sugar


Beat egg and sugar; add oil and milk. Sift tog. flour, salt, baking powder. Slowly blend into first mixture. Add lemon rind and blueberries. Scoop into greased muffin pan (12 serving) to 2/3 full and bake at 375 deg. for about 20 minutes. Cool slightly, then brush tops with small amount of olive oil and dip in granulated sugar and cinnamon mixture. Makes 12 muffins.

    Yummm....I doubled the recipe, substituted the white sugar for Splenda and added the juice of 1/2 lemon. LOVE them! - 3/9/11

    These are delicious!...I used about a tsp of orange peel and a tsp. of lemon juice because I didn't have any lemon peel, but they turned out wonderfully! Thanks for such a great recipe! - 4/26/10
