Introduction

Ingredients

    5 cups oat bran
    1/2 cup flax seed, ground
    1/2 cup walnuts, or other nut
    1/2 cup craisins, or raisins
    2 Tbsp baking powder
    1/2 cup sucanat or raw sugar (or honey, molasses, or brown sugar)
    2 1/2 cups skim milk
    8 oz egg substitute (or 4 beaten eggs)
    3 Tbsp applesauce, unsweetened (or canola oil)
    3 Tbsp canola oil

Directions

Combine all dry ingredients. Stir in wet ingredients until blended completely. Scoop with ice cream scoop into silicone baking cups (or paper lined muffin tin).

Bake at 425 for 15 minutes. (I don't heat oven until ingredients are combined. This gives the liquid time to soak in while the oven warms. Otherwise you will have a very runny batter on the first batch. I also double this each time and freeze a lot). Makes 26 muffins (I eat 3 each day). Freeze extra muffins and thaw in microwave as needed.
