Introduction

Ingredients

    3 Eggland's Best Egg whites
    1/4 cup pumpkin puree
    1/4 cup banana, mashed(optional)
    1 tsp vanilla extract
    2 tsp cinnamon
    1 tbsp flax meal
    1/3 cup quaker oats (ground into flour)

Directions

Spray small skillet with non-stick spray and heat on low/medium heat. Mix flax meal and oatmeal flour in blender or bowl. Add eggs, pumpkin, banana, cinnamon and vanilla. Blend or mix well. Pour half of mix into pan and cook like a pancake. It will not "bubble" like a regular pancake, so keep and eye on it. Flip it over and cook until done. Repeat. This recipe makes 2 pancakes. Serve with warm maple syrup.
