Ingredients

    For cake:
    One White Cake Mix
    One Egg
    One can of Diet Sprite or 7 up Plus, or light colored diet soda.

    For Icing:
    One 4 serving package of Sugar Free Orange Jello
    1/4 Cup Boiling Water
    One 6 0z container of Yoplait Light Orange Creme Yogurt
    1/2 an 8 oz tub of Fat Free Cool Whip

Directions

Preheat oven to 350. Spray 9x11 pan with nonstick spray. Mix Cake mix, can of soda, and one egg until thoroughly mixed. Add 1 cup mandarin oranges and mix for about 10 seconds, until pieces are slightly broken up. Pour into pan and bake for 25-30 minutes, until toothpick comes out clean. Let cool completely.

Make Icing after cake cools: boil 1/4 cup of water. Add to package of Sugar free Orange Jello. Mix well. Add to Orange creme yogurt, and mix together well. Next add 4 oz of Fat Free Cool Whip, and blend well. If it seems runny, you can cool in the fridge for a minute, but don't keep it in there too long or it will be difficult to spread. Cover cake with Icing.

Cut into 15 slices.

Keep refridgerated.

    I love this recipe.. I have made it before.. and lemon is a fantastic substitute for the orange for a bit more tangy taste... thanks for sharing - 8/29/07
