Ingredients

1 (12oz package) Bird's Eye Steamfresh Vegetables Lightly Sauced in Cheese (Broccoli, Cauliflower, Carrots)
1 cup Yves Soy Ground Crumbes (or another brand)
8 oz Frozen Spinach
1 package Betty Crocker Roasted Garlic Instant Mashed Potatoes
salt & pepper to taste
Directions
Preheat oven to 400 degrees
Microwave Streamfresh vegetable according to package directions. Set aside.
Microwave Spinach until thawed. Add Soy Crumbles and microwave until heated through
Cook mashed potatoes according to package directions in a large bowl.
Spray an oven safe dish with non-stick spray. Spread spinach and soy crumble mixture in the bottom of the dish. Layer vegetable mixture on top then spread the mashed potatoes on the top. Bake in the oven for 20 minutes or until top layer is crusty.
Makes four servings.
