Recipe taken fromk Susan Powter's "C'mon America Let's Eat!" Use this and know one would never know the fish was not fried!!!

Add what ever type of fish such as Orange Roughy, Ocean Perch or other mild, firm-textured fish.

Ingredients

    2 oz non-fat yogurt
    1.5 tbsp Whites egg beaters
    1/4 tsp Spike Seasoning, salt free
    8 oz of small Ocean Perch Fillets
    3 oz crushed Corn Flakes (2-1/3 cups)

Directions

Combine yogurt, egg whites and Spike seasoning, mixing well. Thoroughly coat each fillet with this mixture. Then dip into breading of crushed corn flakes) pressing crumbs into fish. Place fillets in a shallow bakng pan that has been sprayed with nonstick spray. Bake at 450 degrees for about 10 minutes, or until brown on top and crispy.
