Introduction

I found this on the Carnation evaporated milk website (www.carnationmilk.ca). It tastes wonderful! I especially like it after it has been in the fridge overnight and gets really thick.

The fat and calories could be reduced even more if you use fat free evaporated milk like the website suggests.

"Superior Sweet Rice" is just the brand of short grain rice I used.

Number of Servings: 8

Ingredients

    1 1/4 cups [300mL] water

    3/4 cup [175mL] short-grain rice (Arborio or Italian-style)

    1/2 cup [125mL] granulated sugar

    2 cans [370mL each] Evaporated Milk (I used 2 %)

    2 cups [500mL] water

    1/4 cup [50mL] raisins (optional)

    1 tsp [5mL] vanilla extract

    1 tbsp [15mL] cinnamon

Directions

Makes eight 1/2 cup servings

Bring water to a boil in a large saucepan. Add rice, stir to combine. Cover. Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed.

Add sugar, evaporated milk, water and raisins. Stirring, bring to a boil.

Cover, reduce heat to low simmer and cook for 1 to 1 ½ hours, or until the mixture is very creamy. Stir occasionally.

Remove from heat and stir in vanilla. Transfer to a serving bowl and sprinkle with cinnamon. Delicious hot or cold.
