    1 Ripe Mango
    Green Bell Pepper finely chopped
    Small Red Onion finely chopped
    1 Tablespoon of Fresh Grated Ginger
    2 Tablespoons of White Vinegar
    2 Tablespoons of Sugar
    Teaspoon Turmeric
    Teaspoon Cloves
    Freshly Ground Black Pepper to taste


Peel, halve and seed the mango. Cut ii into inch cubes.

Combine the mango with all the other ingredients in a deep 1 quart microwave-safe casserole. Stir thoroughly.

Cook, uncovered, at full power for 10 minutes. Stir and cook for a further 10 minutes on full power.

Allow the chutney to cool slightly, then cover tightly and refrigerate. It will keep for 1 week in the refrigerator.
