Ingredients

3 medium eggs
3 cups of flour
3 cups greek yogurt
1 cup milk
3 TB sugar
4 TB Baking Powder
3 TB Cinnamon
1.5 tsp salt
1/2 cup of frozen, unsweetened blueberries
Directions
Makes 24 4 inch pancakes.
Beat the eggs in a mixing bowl until fluffy.
Add the rest of the ingredients and mix well, donīt overbeat. Add extra milk if needed to get the batter to spread enough on the grill so that the insides aren't uncooked while the outside is burnt. You know the drill if you make pancakes. Lightly grease the grill, make sure it is hot enough, and pour 1/4 cup batter on the grill for each pancake. Wait until bubbles form on the top, then flip over to finish cooking. I served with butter and syrup (not included in the calculations.) Enjoy!
