Introduction
I adapted this from a recipe I had written down on a scrap of paper in my kitchen drawer. The original had over 300 calories per slice.Do not use low fat or fat free yogurt; the quiche won't set properly. I use Dannon Natural plain yogurt. If you still have problems setting, you can use the same amount of mayo, but again, don't use light mayo. I adapted this from a recipe I had written down on a scrap of paper in my kitchen drawer. Ingredients
-
1/2 c. plain yogurt (NOT LOW FAT OR FAT FREE)
2 T. whole wheat flour
3 eggs, beaten
1/2 c. nonfat milk
2 c. lump crabmeat (calculated with canned)
1 c. reduced fat shredded swiss cheese
1/2 c. green onions, chopped
1 c. frozen spinach, thawed and drained well (squeeze out all moisture)
1/2 t. old bay seasoning
1/2 t. dry mustard
1/8 t. cayenne pepper (or to taste)
Directions
Eight servings.
Preheat oven to 350 degrees. Beat eggs, yogurt, flour, milk, and seasonings. Stir in crab, cheese, and veggies. Pour into deep dish pie pan or a casserole dish. Bake approximately one hour, until set and knife comes out clean when inserted in center. Bake time will vary based on dish used. The deeper your quiche, the longer the bake time. I usually start checking at 45 minutes.
