Ingredients

    *sweet raw onion, 0.50 cup chopped
    Chicken Breast, boneless, skinless, 5 breasts, cut in half
    Brown Rice, long grain, 5 cups
    low sodium 100% fat free chicken broth, 8 cups
    western family cream of chicken soup, 1 can
    Kroger Fat Free Sour Cream, 1 cup
    Spinach, fresh, 2 cups chopped
    Mrs. Dash to taste
    Pepper to taste

Directions

Spray a 9x13 pan and pour rice into the bottom. Cover with spinach and onion, sprinkle with spices. Pour broth on top and then lay chicken on top. (this will be very soupy - the rice will absorb it) . Mix the soup and sour cream together in a measuring cup equaling at least 2 cups liquid. Spoon over the top of the chicken, sprinkle with more spices to taste. Bake for 70 minutes at 350, or until rice is cooked.
(I usually put a cookie sheet under so there are no spills in the oven.)
