Introduction

This is a great "make your own" gyro pita's. Using cubed lamb rather than lamb loaf, you keep quite a few unneeded carbs out of the recipe, and this is a very healty alternative to the general gyro you would get in a restaurant. Ingredients

    2 lbs small cubed (1/2" cubes) Lamb (any cut, the leaner the better)
    18 4" Whole Wheat Pita's
    3 Large Tomatoes, Diced
    1 Large Onion, Diced
    1 Cucumber, peeled and sliced
    1 jar of Kalamata Black Olives, diced

    TO MAKE Tzatziki Sauce -
    1 Container (6oz) Greek Oikos Yogurt
    1 Whole Cucumber, diced and peeled
    2 tbsp Greek Seasoning
    1 tsp lemon juice

Directions

This will make 18 4" pita's. Good party/potluck recipe!

1. Dice your tomato,and onion. Peel and slice one of your cucumbers. Run a rough chop through your drained olives.

2. Place 1tbs extra virgin olive oil into skillet, heat to medium high. Through in small cubed lamb meat. Cook for 4-5 minutes, or until center of meat is slightly pink.

3. Arrange items to create your own pita's!

TO MAKE TZATZIKI SAUCE:

Combine Greek Yogurt, Diced cucumber, greek seasoning, and lemon juice into blender or food processor. Blend until sauce is smooth, no cucumber pieces left. Sauce will be a bit runny. Put into bowl to top your pitas!
