Introduction

This is a simple, fat-free salad that tosses up very quickly. If desired, you can throw in a few tablespoons of olive oil in the dressing, but I like it just fine without. Ingredients

    Pasta, cooked, 16 oz

    Cabbage, fresh, 4 cup, shredded
    Carrots, raw, 1 cup, grated
    Bean sprouts, 4 cup
    green onions, 4 stalks sliced
    Cilantro, raw, 9 tbsp
    Soy Sauce, 3 tbsp
    Cider Vinegar, 3 tbsp
    Chili Garlic Sauce, 2 tbsp, more or less to your taste

Directions

Cook pasta according to package directions. While pasta is cooking, shred cabbage and carrots or you can save time by purchasing a bag of already shredded cabbage with carrots. Slice green onions thinly and chop the cilantro and set all aside.

In the last few minutes of cooking the pasta, add beans sprouts to pasta water to par cook. When pasta is done, drain pasta with mung beans.

Mix together soy sauce, vinegar and chili garlic sauce in small bowl.

Toss all ingredients together.

This can be eaten warm or cold. I prefer it cold as a salad. Simple and easy!
