Ingredients

2 large cans of Tomato Products ( I prefer Dei Fratelli because they tend to be lower in sodium to start)
-Petite Diced Tomatoes
-Tomato Sauce
1 c. Canned or fresh mushrooms
.5 c. frozen or fresh spinach
3-4 cloves garlic
1 T. Olive oil
To taste:
sea salt/pepper
basil
parsley
Italian seasoning
red pepper flakes
rosemary
Directions
1) Add olive oil to sauce pan, then add garlic cloves (crushed or chopped, either is okay).
2) Once the garlic has been sauteeing for a while, add the spinach until it's wilted. Then add the mushrooms.
3) Add the plain tomato sauce and the diced tomatoes to the mixture.
4) Lastly add all the seasonings to taste. Add other vegetables or even meat as desired.
5) Let stew for 15-20 minutes.
Makes about 15 1/2 c. servings. Tastes great on whole wheat pastas, as a pizza sauce, and much more. Also preserves well so you can make a big batch and use little by little. Enjoy!
