Introduction
These are super yummy and nutritious. And only 90 calories each! Plus add any toppings you want. I like flax seeds, sunflower seeds and other things like that. Ingredients

3 cups oatmeal (not quick)
1/2 Cup flour (white or whole wheat)
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
1/2 tbsp cinnamon
pinch nutmeg
1/2 cup brown sugar packed
1/3 cup margarine (earth balance used here)
1/3 cup unsweetened apple sauce
1/3 cup pumpkin puree
1 tbsp honey
1/4 cup mini dark chocolate chips
1/4 cup soy milk
Directions
Mix dry and wet ingredients separately. Leave out chocolate chips.
Add wet to dry and combine.
Add chocolate chips.
Cover and refrigerate for minimum 2 hours so the oats absorb the liquid. Ok to refrigerate overnight.
Spoon onto a cookie sheet and top if desired (ie with seeds and nuts).
Bake at 375 for 13 minutes and enjoy! Makes approx 3 dozen cookies.
