Ingredients

    2 1 ib squirrels
    2 Bay leaves
    1 cup of chopped onion
    1 cup of chopped celery
    10 medium baby carrots chopped
    2 tsp salt
    1/2 tsp pepper
    Water added to pressure cooker to cover squirrel

    Dumplings
    2 c. whole wheat flour
    1/2 tsp salt
    4 tsp baking powder
    3/4 cup non fat milk

Directions

I pressure cooked the squirrel with the bay leaves at 15 pounds of pressure for 15 minutes. Then remove the meat from the bones. Added onion, celery, and carrots. Season with salt and pepper if desired. Cook this until the vegetables are done. For the dumplings, mix the flour, salt, and baking powders together, Add the milk and mix. You can roll these out if you like but I dropped by spoonfuls on top of the squirrel and veggies. Cover and cook for 15 minutes or until dumplings are done.
