Ingredients

4 8 oz baking potatoes
cooking spray
1 cup chopped onion
1 cup sliced mushrooms
1 tsp. dried oregano
1/4 cup chopped parsley
1/2 cup 1% milk
2 Tbsp. crumbled blue cheese
2 Tbsp. Smart balance buttery spread
3/4 tsp. salt
1/4 tsp. black pepper
3/4 cup reduced fat sharp cheddar shredded
Directions
1. Pierce potates with fork and arrange on paper towels in microwave onion. Cover with wet paper towels. Microwave on high 12 min. or until done.
2. Heat lg. nonstick skillet. Coat with spray. Add mushrooms, onion, and oregano. Cook until tender. Remove from heat, and stir in parsley.
3. Preheat oven to 350.
4. Cut potatoes in half lenghtwise, and scoop out pulp, leaving 1/4 inch thick shell. Arrange shells on baking sheet. Set aside.
5. Beat potatoes, milk, blue cheese, buttery spread, salt, and pepper until smooth.
6. Stuff shells evenly with potato mixture. Top with mushroom mixture, and sprinkle evenly with cheddar cheese.
7. Bake at 350 for 20 min. or until cheese melts.
