Ingredients

    3 eggs
    1T cider vinegar
    1/4 C Smart Balance Oil
    1/4 C honey

    In separate bowl mix the following, then add to bread machine:
    1 1/2 C coconut milk (can substitute lowfat milk) - room temperature (Or you can use buttermilk and eliminate the lemon juice)
    1T lemon juice

    Continue adding these directly to bread machine:
    1 tsp sea salt
    1T Xantham gum
    1/3 C arrowroot flour (substitute cornstarch if needed)
    1/2 C dried mashed potato flakes
    2 1/2 C Bob's Red Mill gluten free all purpose baking powder
    1T active dry yeast

Directions

Combine all ingredients in the order listed. Choose the setting on your bread machine that will cook for 4 hours (Light).
