Ingredients

    1 tablespoons extra-virgin olive oil
    1 pound ground turkey (or lean ground beef)
    Half an onion, chopped
    2 cloves garlic, finely chopped
    1 tablespoon chili powder
    1 teaspoon ground cumin
    1 15 ounce can black beans
    1 15 ounce can pinto beans
    1 15 ounce can tomatoes with green chilies
    Salt and pepper
    1 cup grated low fat Mexican cheese (or pepper jack cheese)


Directions

1. Heat the olive oil in a large frying pan over medium high heat. Add the turkey (or beef) and cook for 7 minutes.
2. Drain the turkey. Add the onion, garlic, chili powder and cumin and cook over medium-low for a further 5 minutes. Add the beans and tomatoes with their liquid. Bring to a simmer. Cook, stirring occasionally, about 20 minutes.
3. Season with salt and pepper.
4. Finally, stir in the cheese until it melts.
