Introduction

Ingredients

100g cooked chicken
•celery (allowed amount)
•1-2 c broth
•3 cloves garlic
•1 T dehydrated minced onion
•1/2 t parsley
•1/2 t basil
•ground white pepper (to taste)
•salt (optional)
Directions
1. Preheat saucepan over MED-HI heat.
2. In food processor, combine all ingredients and pulse until reaches desired consistency.
3. Pour into saucepan and bring to boil.
4. Reduce heat to simmer, cover, and heat 20-30 mins.
5. Serve

I simmer the veggies (celery should be 2 cups) and a chunk of chicken breast in the broth before blending. I blend part of the breast and cut up the rest to add after blending. For a "Greek Soup" after you blend the soup, add juice of 1/4 lemon and stir in some leftover cooked cauliflower "rice. - 9/29/12

I created an account just to rate this soup. It is great! I add more basil and more of all the spices actually. Like other reviewers I ensure it is thoroughly pulsed and blended. Simmer for the full 30 minutes.rich and hearty! P.S. I double the batch and refrigerate for a quick reheated meal. Yum! - 6/25/12
