Introduction

This is a good quick fix recipe and has been a favorite in my household for a long time. You can even convert the ingredients to make it a healthier version by using low-fat soup and whole wheat pasta of any kind. Add sour cream if your family likes it. Ingredients

    1 pound of lean ground beef
    1 14.75 oz. can of Campbell's Cream of Mushroom soup
    1 4 oz. can of mushrooms (pieces and stems are fine)
    1 cup elbow macaroni (uncooked)
    2 tsp. salt
    1/2 tsp. black pepper

Directions

Cook macaroni in (salted) boiling water until just done.

In the mean time, brown the ground beef with the salt and pepper in a large skillet until done. Drain to eliminate fat. Return meat to pan and add the can of soup. Drain mushrooms and cut any large ones in pieces. Add to the skillet with the beef and soup mixture. You may want to add just a bit of water to thin the sauce out a little.

When macaroni is done, drain the water off, but don't rinse it. Add to the rest of the ingredients and stir together.

Serve your favorite veggies on the side.

Makes 3 - 2 cup servings.
