Ingredients

2 - anneheim peppers - diced
2 - fresh jalepeno peppers - diced
1/2 large green pepper - diced
1/2 large yellow pepper - diced
1/2 large red pepper - diced
4 - dried chili peppers - chopped up well
2 Tbls olive oil
2 cups fresh chopped cilantro
2 - 1 litre boxes chicken broth
1 - 10.5 oz can beef stock
1 - small can diced jalepenos
1 - 15 oz can stewed tomatoes
2 to 3 Tbls - Emerils Southwest Seasoning (or other comp
brand)
1 Tbls - cayenne pepper
3 med chicken breasts, grilled and diced
**optional**
Tortilla shells cut into to strips about 1/4" wide by 2" long deep fried and seasoned with cajun that can be added to soup when serving
Directions
Grill the chicken breast anytime prior to preparing the remainder of the soup base.
Dice anneheim, jalepeno, green, red and yellow peppers and put into soup pot
add the chopped dried chili peppers
add the olive oil and 1 cup of the chopped chilantro (keep the other cup for a garnish when serving)
Saute this mixture til tender
add:
chicken broth, beef stock, canned jalepenos and stewed tomatos
add the seasonings and the diced chicken breast and let simmer about 1 hour prior to eating to get the full flavor
Deep fry the tortilla strips if you choose and add as you are enjoying the soup.
