Ingredients

9 - 4oz. chicken thighs (w/bone & skin)
2c - frozen corn
2c - frozen pean
2c - frozen carrots
1c - fresh onion, diced
4c - diced potatoes
2 tbsp - garlic powder
2 tsp - turmeric
2 tsp - ginger
1 tsp - basil
1 tsp - thyme
2 tsp - black pepper
Directions
Bring 1.5 gallons of water to a boil in a large stock pot. Add the chicken thighs and boil until the chicken is cooked thoroughly. Remove the thighs from the water, leaving the water in the stock pot. Strip the skin and bone.
When you add the chicken depends on your preference. If you want big chunks of meat, wait until the soup is almost done. If you want smaller, more stringy pieces, return the chicken to the stock immediately.
Add all other ingredients and simmer on low for at least an hour. The longer you let it simmer, the better it will taste. If you haven't added the chicken, put it back in about 15 minutes before you're ready to serve it.
This makes 16 1-cup servings.
