excellent with corn muffins, jalepeno cheddar corn bread, or tortilla chips and/or topped with low-fat sour cream or cheese

Ingredients

    8 oz. left over diced chicken breast
    2 cups frozen corn & black bean fiesta mix (from GFS)
    1/4 cup each diced onions, celery, mushrooms, carrots
    2 tbsp chicken boulliion or chicken base
    1/4 tsp cayenne pepper
    1 tbsp crushed garlic
    2 tbsp chopped fresh cilantro
    2 tbsp or juice of 1 lime
    4 cups water

Directions

saute diced veggies in pot with non-stick spray
add remaining ingredients except lime and cilantro
bring to boil, reduce heat, cook 15-20 minutes to allow flavors to come together and frozen veggies to thaw and cook thru
turn off heat
add lime juice and cilantro
