Ingredients

    2 mashed ripe bananas
    1 15 oz can of pumpkin puree
    1/2 applesauce (or 4-oz cup)
    1/4 cup canola oil
    3/4 cup pureed raw carrots
    2 large eggs

    1/4 cup blackstrap molasses
    1/4 cup turbinado (raw) sugar
    1/4 cup granulated sugar

    2 cups white whole wheat flour
    1/2 cup rolled oats
    1/2 cup wheat germ
    1/4 cup ground flaxseed meal
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    3 tsp pumpkin pie spice

Directions

Preheat oven to 350 degrees. Spray 4 mini loaf pans with nonstick cooking spray.

Place mashed banana, pumpkin puree, applesauce, pureed carrots, oil, and eggs in a large bowl. Beat with an electronic mixer on low speed or mix together well by hand (whisk or fork). Add sugars and mix until fully incorporated. Add 1 teaspoon of the pumpkin pie spice to the mix.

Place flour, wheat germ, oats, ground flaxseed, baking powder, baking soda, salt, and 2 teaspoons of the pumpkin pie spice in a medium bowl and stir together until fully mixed. Add flour mixture to wet ingredient mixture and mix together until just moist.

Pour batter into loaf pan and bake for 45-60 minutes or until toothpick placed in center comes out clean.

Makes 4 mini loaves. Each loaf equals 3 servings.
